I don't really know of any coloured interfacing, although in theory you could dye some white stuff if you were that bothered about it (but I don't think you'd need to).
My question is actually why are you using interfacing on it at all? Is it just a backing to cover the back you're looking for or is there some particular reason you want to glue things down? I'd suggest not using interfacing but just putting a matching colour of cotton behind the Aida as interfacing will really stiffen up the stitches and could end up making some stitches go wonky (not to mention the possibility that the adhesive could seep through to the front).
If you insist on it, cut small scraps of the Aida and try both and see which you prefer.
2) I am making the stitched felt in to baby booties so think I need to back it to avoid the threads getting caught and pulled or the metallic threads scratching toes - (daft question) but is it ok to iron felt or does it shrivel like some fabrics do when you iron them?
In general, there is absolutely no reason not to iron felt. That said, if you've done the hard work already, I would suggest finding some scraps from your project and ironing that just to test it first. Also, you will probably need to protect the stitching you've done even though the felt will probably be fine, so I would suggest ironing through a kitchen towel. (Just dampen a towel, lie it over the part you want to iron, and iron)
