How Much for Border?

I've always struggled with this: How much fabric do you leave on the edges of your pattern? I either end up with a ton, or barely enough. I know it varies depending on what the final product is, but I normally frame mine, so we'll go with that. Is one inch enough on all sides? Do I need more than that? Less? :help:

My local cross stitch shop says 3" but I usually go with 2". Going with a 3" though means I don't need to be super careful about centering my project but I do hate the wasted "scraps" that could have made up a good square if I could put them together.

I usually go between 3" and 4" so I have enough to properly frame, lace, and sort it all out. I find anything less I end up without enough to get stuff matted without me worrying that I'm going to have thins pull loose. I can always cut extra off.
