Cookies

Post by m4pl3g1rl »

I love cookies. Well, I love making cookies. They're like little bites of happiness I get to make and then share. Of course I end up making about 60-90 at a time, so I might be a little crazy. I don't eat them. I give them to people who need a pep up.

I love chocolate chip cookies. The base is a great jumping point because it doesn't really have any flavor of its own. I'm working on variations of the humble chocolate chip and here is what I have thus far.

1. Basic Chocolate Chip Cookie (use really great chocolate, it makes all the difference.)
2. Basic Mixed (milk/white, milk/dark, etc.) Chocolate Chip
3. Bacon Chocolate Chip Cookie (use sweet bacon, pre-cook, then crumble and add to Basic Chocolate Chip)
4. White Chocolate and Dried Fruit (cherries are to die for in this variation)
5. White Chocolate and Lime Juice (sounds crazy, I know but it's SO good)

I also found a fun recipe for banana bread cookies. Since I have some ripe bananas and guests tonight, I figure the stars have aligned!

What kind of cookies do you like?

I absolutely love chocolate chip cookies! I also love peanut butter cookies with a Hershey kiss sitting right in the middle of it. I'm going to have to make them again sometime. I haven't had them in quite a while.

My new favorite cookie I'm calling "pantry cookies" because I made them just with stuff I had on hand in the pantry. I used a bar of Ghirardeli semi-sweet chocolate, the wrapper has a recipe for double chocolate chip cookies. You melt the bar of semi-sweet and mix it into the dough. Instead of additional chocolate chips I used butterscotch chips, and instead of walnuts I used fresh chopped pecans. I've made them again since; they are amazing!

Just for you, Knittenkitten, some I made a while back. If you can look at this without drueling, you have more self-control than me.

NOM NOM NOM!!! Cookies are the BEST!!! My mother-in-law sent some fresh baked chocolate chip cookies down with my hubby last weekened, and they didn't survive but for 2 days between my son and I... they were AWESOME!!! They were pretty much flat (almost no rise), but the outside was just crispy enough and the middle was nice and chewy and they had tons of chocolate chips in them! I don't know how my MIL did it but they were the best cookies I've had in a while!

I love cookies!

I don't make them as much as I'd like, but I always make them at Christmas. It isn't Christmas until the house smells like cookies. It was a family tradition. My mother makes tons of different types of cookies and hands plates around to pretty much everyone. I don't make nearly as many types as she does, but I usually do 3 or 4 at least.

Lately I've been liking my Grand Marnier and Chocolate cookies as well as my Cocoa Cream Cheese. They're tastey.

I haven't made peanut butter cookies in ages, but they look delicious and sorely tempting now.

As for chocolate chip- you should try chocolate chip cookies with oatmeal! They're delicious too.

If you freeze or chill your cookies before you put them in the oven you can get the crispy outside and chewy middle because the outside will cook faster than the middle.

Favourite cookies?

Black Pepper Cookies!

6oz butter
3/4 tsp black pepper
3/4 tsp cinnamon
1/4 tsp ground cloves
1 1/2 tsp vanilla essence
8oz caster sugar
1 egg
6oz self-raising flour
1/4 tsp salt
3oz cocoa

Preheat Oven to 190C, 375F, Gas Mark 5
Mix together the butter, pepper, cinnamon, cloves and vanilla together in a bowl.
Gradually add the sugar and egg and beat together.
Sift the flour, salt and cocoa into the mixture.
Form a firm dough.
Lightly flour your hands and roll small balls of dough into 1 inch balls.
Place on baking tray and gently flatten them.
Bake for approx 12 minutes.

I had the best chocolate chip cookies at a party in the fall. They were chocolate chip cookies stuffed with Nutella and sea salt sprinkled on top. Oh great, now I'm going to drool on my phone!

Cookies!!!

I love baking, and some of those ideas sound quite tasty..

My thing is shortbread. I love it, and I love making it. I'ts just so versatile as well

200g plain flour
100g corn flour
100g butter
100g icing sugar (caster sugar for a grittier texture)

Sift dry ingredients, then cut the butter (real butter please - not margarine (will do in a pinch) or I-can't-believe-its-not-a-bunch-of-weird-chemicals-that-go-decidedly-odd-when-heated (Never)) into small bits
Rub butter into dry ingredients. Take it through breadcrumbs to a solid dough
Shape into bikkies and bake at 180 (Celcius - the temp everything seems to be cooked at for imperialists wondering) until golden brown
If you give them a quick hit at a slightly higher temp and drop it back to just below this they get a slight crunch to the outside while still melting in the middle.

And now the best bit: Modifications!
Chocolate - add as many choc chips as the mix can take. Putting cocoa or nutella in the base mix is also tasty
Chilie - A hint of chilie powder in the mix, possilby tempered with chocolate. Don't overdo it
Cinnamon and ginger - one of my favorites - a good dash of cinnamon in the mix, and finely chopped crystalised ginger added in
I've also been experimenting with a chai spice mix, but haven't got that quite right yet.
WIPS: Dwarf Fortress blanket, sailing ship stitch, shiny pokemon, moth bags

I don't make cookies well, but I'm stupidly good at making tea, especially proper sweet tea with secret ingredients.

I'm pretty psyched to see some savory-sweet cookie recipes; too much sugar overloads me, so having some complexity to cut the sweetness helps a great deal.

I love cookies, but when I make them they never seem to turn out right! I tend to make cakes more than cookies - mainly because the bf buys eggs in bulk and usually doesn't eat them all before they go off. :club: I made chocolate cupcakes last night, might post a pic after I've decorated them - if they turn out ok.
