Sprite Stitch Board!

I'm thinking of stitching some food monsters for my kitchen, like the Funghoul, Cruelcumber, the peppers from DQ8 and maybe an onion or carrot from DQ6. I've got good sprites from 3, 6, and 11 for the Funghoul, Wild Carrot, Ornery Onion, and Cruelcumber (thanks to the 2D version on the Switch, yay!); however, Capsichum and Paprikan from DQ8 aren't really sprites. So my question is, is anyone here good at sprite artwork? I have pictures from Dragon's Den (woodus.com/den), but I'd like to condense them into sprite-sized pics.
