I lined the back with fleece.

Nice! the colors really pop and I love the fleece backing!

I made a mario scarf the same way for my husband for christmas but it won't stay flat. Does the border help to keep yours flat?

Definitely, for this scarf I did two rounds of single crochet which helps with the curling edges.
I also washed it with just fabric softener on a light cycle then tumble dry on low and that seems to help too.
